Fajitas are a popular Southwestern meal that consists of grilled beef, chicken, or shrimp, served with sautéed onion, tomato and bell peppers on a preheated cast-iron skillet, with cool condiments [guacamole, sour cream, salsa and lettuce], and beans and rice on the side. Diners combine fajitas and sides in corn or flour tortillas for their own custom tacos.
Our Fajita Seasoning is a hand-mixed, MSG-free blend of herbs and spices that is perfect for your fajitas, tacos, enchiladas and salsas. Fajita Seasoning makes a delicious marinade for skirt steak [the kind of steak commonly used in fajitas], chicken, or shrimp, but also makes a tasty seasoning salt for burgers, dressings, and vegetables.
Mix 1 Tbs Fajita Seasoning with 1 Tbs lime juice and 1/4 cup vegetable oil for a rich marinade. Add to thin slices of meat, and marinate in the fridge overnight. Toss into a preheated skillet with thinly sliced onions, and your fajitas will cook quickly. Add bell pepper and optional tomatoes and mushrooms about two minutes before end of cooking.
Some cooks like to cook fajitas in one skillet in the kitchen, and then serve on a wide, shallow cast iron skillet [preheated in the oven] for maximum "sizzle" presentation at tableside. An extra squeeze of fresh lime or lemon wedges is a final fragrant, dramatic touch!
