Roasted Brussels Sprouts with Bacon

Ingredients
6 Slices Uncured Bacon, Cut Into 1" Pieces
2 lbs. Brussels Sprouts, Trimmed and Halved

3 Tbsp. Butternut Squash Seed Oil

Sea Salt, Fine (to Taste)

Black Pepper, Fine Ground (to Taste)
Directions
Preheat oven to 375°F. On the stove, heat a large ovenproof skillet over medium-high heat. Add bacon to the skillet and fry, stirring occasionally, until the bacon is crisp (approximately 5-6 minutes). Remove the cooked bacon from the skillet and place on a paper towel-lined plate. Set aside. Drain the remaining bacon drippings from skillet.
Add the brussels sprouts to the skillet with the Butternut Squash Seed Oil. Toss vegetables to thoroughly coat them with the oil and leftover bits of pan scrapings. Season with salt and pepper to taste. Transfer the skillet and coated vegetables to the preheated oven and roast for about 30 minutes, or until sprouts are nicely caramelized and lightly browned.
Remove from oven and crumble and stir in cooked bacon. Return to oven for another 10 minutes to allow the flavors to combine. Remove from the oven and transfer to a serving dish. Serve immediately.
