Pecan Pralines

Ingredients
2 C. Whole Pecans
1 1/2 C. Granulated Sugar
3/4 C. Brown Sugar (Packed)
3/8 C. Butter
1/2 C. Whole Milk or Half and Half

1.2 tsp. Sea Salt, Fine

1 tsp. Vanilla Extract, Mexican
Directions
Toast the Pecans
Preheat oven to 300°F. Toast the pecans for 5-8 minutes, keeping a close eye on them so they do not burn.
Remove pecans from the oven and allow to cool. Roughly chop half of the pecans.
Make the Pralines:
Combine the whole and roughly chopped pecans, granulated sugar, brown sugar, butter, and milk in a large saucepan over medium heat. Heat the mixture to between 235-240°F (use a candy thermometer to keep track of temperature). Remove from the heat and stir in the vanilla extract.
After removing from the heat, allow to stand for 2-3 minutes, then drop spoonfulls of the mixture onto a baking sheet lined with parchment paper or aluminum foil and let cool completely.
