Ingredients
1 C. Granulated Sugar
1/2 C. Shortening
2 Eggs
3 Bananas, Mashed

1 tsp. Vanilla Extract, Mexican

1/4 tsp. Sea Salt, Fine
1/2 tsp. Baking Powder
1 3/4 C. All-Purpose Flour

2/3 C. Organic Cacao Nibs
Directions
Preheat oven to 350°F.
Combine sugar, salt, baking powder, and flour in a large mixing bowl.
Place eggs, bananas, shortening, and vanilla in blender and blend until bananas and other ingredients are well combined and fairly smooth.
Add blended mixture to dry mixture and stir well to combine. Stir in cacao nibs.
Bake for 50 minutes or until a toothpick inserted in center comes out clean. Keep an eye on the bread after about 35-40 minutes of cooking and loosely cover with aluminum foil if the top is getting too brown.
Recipe Note
Use very ripe bananas in this recipe if possible. If your bananas are fresh and just ripe, add 1-2 Tbsp. of hot water as you blend wet ingredients together to thin out the mixture.
