1 lb. Linguini (dry)

1/2 C. Chipotle Infused Olive Oil

1/4 - 1/2 tsp. Red Pepper Chile, Crushed
2-3 Sprigs Italian Parsley, Chopped
1/2 Lemon, Zested
3 Tbsp. Toasted Pine Nuts
1/4 C. Parmesan Cheese, Grated
1 C. Reserved Pasta Cooking Water

Sea Salt, Fine (To Taste)

Black Pepper, Coarse Ground (To Taste)
Directions
Cook pasta in a large pot of salted, boiling water until al dente. Reserve one cup of past cooking water, and drain the rest.
While the pasta is cooking, set out a large, heat-safe serving dish and add the Chipotle Infused Olive Oil and chopped parsley. Zest the lemon directly over the bowl, then squeeze the lemon's juice into the mixture, taking care no seeds make it into the bowl. Whisk together.
Note: You can use 1/4 C. of the Chipotle Infused Olive Oil to start with, then add more at the end if desired if you're worried about the dish being too spicy.
Add the hot, cooked pasta to the serving dish, then add the cheese and toasted pine nuts. Toss to coat. Season generously with salt, pepper, and Red Pepper Chile, Crushed. Add a bit of the reserved pasta water if the mixture is dryer than you'd like.
