Caprese Skewersby Rory
These Caprese Skewers (or Caprese on a Stick) make a simple and tasty appetizer or snack.
2 C. Cherry or Grape Tomatoes
8 oz. Buffalo Mozzarella (Cubed) or use the Mozarella Pearls
Fresh Basil Leaves (or sprinkle with dried Basil Leaf)
1/8 C. Traditional Balsamic Vinegar
1/8 C. Basil Infused Olive Oil
Sea Salt, Fine (to Taste)
Black Pepper, Coarse Ground (to Taste)
Assemble skewers by alternating tomatoes, mozzarella, and (if you're using fresh) basil leaves. If you're using dried basil, roll the mozzarella in it before assembling the skewers.
Season the skewers with sea salt and coarse pepper, then drizzle with Traditional Balsamic Vinegar and Basil Infused Olive Oil.
Note: You can assemble the skewers several hours in advance and keep them refrigerated, but we recommend seasoning with salt and pepper and drizzling with the olive oil and balsamic just before serving.
