Ingredients

1 lb. Salmon Fillets

¼ C. Chipotle Infused Olive Oil

1 tsp. Whole Cumin

1 tsp. Sea Salt, Fine

1 tsp. Brown Sugar

8 Small Flour Corn Tortillas

3 Large Radishes
-
2 Stalks Kale
-
1 Alfoos Mango
-
1 Small Bunch Cilantro

2 Tbsp. Persian Lime Fused Olive Oil

1 Tbsp. Chipotle Infused Olive Oil
-
2 tsp. Oregano White Balsamic Vinegar

1 tsp. Sea Salt, Fine

For the Mango Slaw:
Directions
Place a dry skillet over high heat to warm. Add the whole cumin and toast until fragrant (about 20-30 seconds). Keep an eye on it because it’ll go from golden brown to burnt quickly.
Remove the whole cumin from the heat and grind it finely in a mortar and pestle. Add salt, brown sugar, and 1 tablespoon of the Chipotle Infused Olive Oil into the mortar and mix to form a paste.
Rub the mixture onto the salmon fillets and set aside while you prepare the slaw.
To make the slaw, thinly slice the radishes and chop the kale and mango. Rough chop the cilantro. Add the radishes, kale, mango, and cilantro to a medium-sized mixing bowl and drizzle with Chipotle Infused and Persian Lime Fused olive oils, the Oregano Balsamic Vinegar, and Sea Salt. Massage the oil mixture into the salad until the kale is glossy.
Place the skillet over high heat and preheat. Add the remaining Chipotle Infused Olive Oil and sear the salmon for 2 minutes per side, then remove from heat. The fish should be pale pink and cooked through, but not dry.
Wrap the tortillas in a clean kitchen towel and microwave for 1 minute to soften.
Assemble the tacos with slaw on the bottom, followed by pieces of the seared salmon, more torn fresh cilantro, and slices of pickled red onion or your other favorite fish taco toppings.
