The Cobrancosa olive creates a nice, medium-intensity olive oil with a nice pungency, low level of bitterness, and a nice peppery finish. In addition to its ripe olive flavor, you'll pick up on notes of ripe apple, butter, tropical fruitiness, nuttiness, and maybe even a bit of grassy flavor.
